Mexican rice is a basic recipe, which can be cooked to your liking, make it more or less soothing or acrid. You can prepare Mexican rice for only 30-45 minutes. The result is a hot, tasty meal for 6 people. Keep the ingredients at hand at any time to able to cook this tasty and cheap meal with little effort.
Prepare the vegetables. Chop finely onion and garlic. The carrot and red sweet pepper wash, peel and cut into small cubes. Preheat olive oil in a frying pan and put onion and garlic in it to fry. Fry, stirring for 2-3 minutes, until the onion becomes lighter.
Add long grain basmati rice. Stir and fry for another 2 minutes.
Add the tomato paste.
Then we add the hot broth. Stir and bring to a light boil.
Add carrots and red pepper cut into small cubes. If you use frozen corn and peas, then put them in the pan at the same time! And if corn and peas are canned, then add them in 10 minutes. Boil everything on a low heat (stirring occasionally).
After 10 minutes, add the peas and corn. Add salt and pepper to taste. Then add the spices - chili and cumin (jeera). Stir and continue to cook for another 10 minutes. If the liquid begins to evaporate, add some broth or just boiled water.
2 minutes until cooked add the chopped cilantro (I add parsley).
Serve immediately!
