How To Cook Eggplant

It can happen that you search for elaborate, appetizing, but rather ordinary snack? There is a quite simple recipe for cooking of eggplants with mozzarella and tomatoes. It is incredibly tasty and attractive.

The advantage of this snack is that eggplants with mozzarella and tomatoes can be served in home conditions as rolls, and they could also be put as small turrets of any desirable size. As a sauce, you can use not only mayonnaise, but also any other sauces to your taste. Besides, such splendid snack will perfectly look on your table.

Ingredients:

  • 3 eggplants;
  • 4 tomatoes;
  • 1 pinch of salt;
  • 1 pinch of pepper;
  • olive oil — to your taste;
  • mayonnaise — 2 or 3 tablespoonfuls;
  • mozzarella — 200 g;
  • garlic — 1-3 cloves.

How To Prepare

1. First of all wash up, dry and cut eggplants in thin ringlets.

2. Salt and pepper them to your taste. You can also use in process of cooking of eggplants with mozzarella and tomatoes some spices and dried herbs to taste. Leave them for about 10 minutes, and during this time heat up your oven to 200 degrees.

3. Put eggplants on the baking sheet covered by parchment, spray them with olive oil and place into the oven for about 20 minutes.

4. Now then, you can wash up, dry and cut tomatoes.

5. Put tomatoes on the baking sheet, previously covered by the paper for pastries. Salt a little and pepper them.

6. Pour tomatoes with olive oil and place into the oven for about 12-15 minutes.

7. Might be quite good eggplants in result.

8. Then, the second baking sheet must be ready, too. By the way, you can cook eggplants with mozzarella and tomatoes in home conditions not necessarily in an oven, but on a grill, for example.

9. While vegetables are cool down, finely chop your garlic and add it to mayonnaise. You can also add fresh greens, to taste.

10. And now the last stage - how to prepare eggplants with mozzarella and tomatoes for serving. So, smear each eggplant ringlet with a small amount of sauce.

11. Top this with tomato above. Then put eggplant and sauce again.

12. Cut cheese into similar thin ringlets and place them above.

13. Turrets may have any height as you would like. You can also add couple of leaflets of fresh basil. That's all about it.  And now you know how to make eggplants with mozzarella and tomatoes. Enjoy your meal!
