How To Cook Bratwurst

The picnic season is opened! What a lovely warm weather! Flowers blossom1 It’s time to get ready for a picnic! Today I will cook homemade grilled sausages. It is a very simple and delicious dish. Sausage-making is easy and fun! Let’s go to the kitchen and cook!

We need:

  • 1-1.5 kg (2.2- 3.3 pounds) of pork shoulder (back or neck);
  • 200 g (7.05 ounces) of fat;
  • 2 heads of onion;
  • salt to taste;
  • a pinch of coriander;
  • a pinch of nutmeg;
  • a pinch of red paprika or fresh chili pepper;
  • herbs to taste;
  • 4-5 cloves of garlic;
  • 50 ml of cognac.

Cut meat, bacon and onion into large chunks. Add salt, spices, cognac and mix well. Put it into the leak-tight package and marinade for 30 minutes.

Rinse the casings under running water and leave them in water for a few minutes.

Mince the pickled meat and onion in the mincing machine.

If you do not have a special attachment for stuffing sausages, you can use a plastic bottle. Cut off the top of it and make a funnel. Fill the casings with minced meat and form the sausages. Do not stuff it too much, because the casings may tear. Gently pierce the air bubbles with a toothpick. I have made sausages about 10-12 cm (4-4.72 inches) long. Put the sausages in the fridge to cool down. Let’s get packed for the picnic!

The most important thing in cooking on grill, barbecue or campfire is to keep the proper temperature. This way our sausages will be juicy and rosy. Prepare the right amount of coal or wood. The weather in May is windy, so the grill heats quickly. When the surface is hot enough, get ready the sausages. Make a few punctures in them with a toothpick. Put the sausages on the grill and fry them turning on both sides. It will take 15-20 minutes.

The sausages are ready!
